How To Make the Ultimate Grilled Cheese Sandwich

There are many points of contention when it comes to crafting a grilled cheese sandwich. The bread, the cheese, the accompaniments…This is our method and we think it makes the ultimate cheese sandwich.

Ingredients

4 slices of sourdough
70g strong cheddar, coarsely grated
50g Gruyere, coarsely grated
Pinch of cayenne pepper
1-2 tbsp pickles or gherkins, grained and finely diced (you can omit this or replace with diced red onion or even chives)
Butter for grilling

Method

  1. Place a frying pan (preferably cast iron) on the hob and generously grease the bottom with butter.
  2. In a bowl combine the grated cheeses and chopped pickle (or onion/chives) and add a pinch of cayenne powder.
  3. Collect the sliced sourdough and place the mixture on 2 slices of bread. Then top with the other 2 slices. You may not need all the mix depending on the size of the slices, the mix will keep covered in the fridge for 24 hours.
  4. Now heat the pan on a medium heat. If the pan is too hot, you’ll burn the butter.  When the pan is hot and the butter is bubbling add the assembled sandwiches and use a heavy dessert plate or metal spatula to press the bread down in the pan.
  5. Cook the sandwiches for about 4 minutes and then turn them over and cook for a further 4 minutes. You can add more butter if the pan is looking dry, moderate the heat to ensure the pan doesn’t get too hot and scorch the bread. Cook on both sides until the bread is golden brown and the cheese has melted.
  6. Serve immediately.
