American-style Pancakes Recipe

A tall stack of delicious American-style pancakes are a great brunch standby at any time of year.

Ingredients

Serves 4 

 

30g butter (melted and cooled)

225g plain flour

2 ½ teaspoons baking powder

1 pinch salt

3 teaspoons white sugar

2 eggs (beaten)

300ml milk

A little butter for frying

Punnet of blueberries 

Maple syrup for serving

Method

  1. Melt 30g butter in a small pan and put to one side. 
  1. Sift the flour, salt, sugar and baking powder into a bowl and then make a well.
  2. Add the beaten eggs, melted butter in the centre of the well, gradually drawing in the dry ingredients and then add the milk gradually to create a smooth batter. 
  3. Transfer to a jug.
  4. Melt a small amount of butter in a non-stick frying pan and allow to foam.
  5. When the butter is foaming pour in some of the pancake mix to approx. 10 cm diameter.
  6. When the upper side of the pancake starts to bubble and looks like it is setting, you can flip it over and finish the cooking on the other side. This will take a couple of minutes. Repeat the process until you have used all your batter.
  7. Serve a stack of pancakes with blueberries and maple syrup.
