In addition to having gained a real passion for cooking and baking in recent years and a curiosity in how this might develop career wise, I was also looking for a skill to do some formal training in... after stumbling across the Leiths Online website and reading about the Essentials Course, I knew this was the course for me.
A total mix and varied, but always with the aim to make the person eating it smile and enjoy it. I love to cook cuisines from all over the world, with a passion for fragrant, flavourful and colourful ingredients and dishes. Fresh (and local if possible) ingredients are my absolute favourite, and I love to make things from scratch. I usually like to read a few recipes to get some ideas and then make it my own! People often live such busy lives that having time to pause, eat and enjoy a meal whether alone or with others is a special moment that is deserving of some delicious food.
I have always really enjoyed cooking for myself and throwing dinner parties, but have never had formal training. After starting to do lots of baking for guests during my current yachting career and also having the opportunity to travel and eat food in different parts of the world, my passion to make delicious food using fresh and local ingredients grew. I love that when I cook or bake for others it gives me the opportunity to give someone a positive experience, and I'm looking forward to seeing how cooking/baking is part of my career moving forwards.
It has all been so great and varied that it's hard to pick! We are supported by an amazing team of tutors, whether the ones in our videos for each unit (who are so knowledgeable and explain the theory and methods in such understandable ways), and we also get such great support and useful feedback from our mentor (thank you Louisa!). Whilst we aren't studying in person, the team at Leiths make feeling supported very easy.
I think going right back to beginnings with knife skills and preparation skills, and also learning the importance of mise en place. Those fundamentals have allowed me to tackle recipes and methods in a calm, methodical and successful manner. Stand out units for me have been fish filleting and pasta making... two totally new skills to me and ones which are most definitely going to be used often!
I'd love to attend the assessment days in London and hopefully achieve full accreditation. I don't think this will be the end of my study either... I'd like to take some time to practice these skills and enjoy cooking some new recipes/variations, and then hope to return for the Chef Skills course in the future!
Absolutely. It is such a flexible and supported way to gain formal training to elevate your home cooking or to begin taking steps into the culinary career world. Our tutors and mentor are so supportive and knowledgeable. I wish I'd discovered Leiths Online earlier!
