Soy & Sesame Glazed Chicken for the Barbecue

This sticky chicken dish is full of flavour and a core recipe on our Essential cookery course. We've amended the recipe to suit your barbecue. It's perfect for casual summer gatherings.

Soy & Sesame Glazed Chicken For the Barbecue

Ingredients

For the soy-glazed chicken

1 tbsp sesame seeds

6 chicken drumsticks 

1 large garlic clove, crushed 

1⁄2 lemon, juiced  

1 tbsp soy sauce

1 tbsp hoisin sauce, or more to caramelise the chicken

1 tbsp clear runny honey, or more to caramelise the chicken

1 tsp toasted sesame oil

Pinch of cayenne pepper

To garnish

1 spring onion sliced on the diagonal 

Method

Make the Sticky Glaze:

  1. Heat the oven to 220°C. Scatter the sesame seeds in a roasting tin and toast in the oven for 2–3 minutes, then tip them into a small bowl to cool, and set aside for plating.
  2. Mix all the glaze ingredients together in a bowl,  you may want to add 1 tbsp each of honey and hoisin sauce to get a thicker stickier sauce. 

Marinate the Chicken

  1. Prepare each drumstick by slashing them in 2-3 places with a sharp knife.
  2. Marinate the chicken in the glaze for a minimum of 2 hours but ideally overnight.

Barbecue the Chicken

  1. When you're ready, prepare your barbecue.
  2. Place the chicken pieces on the barbecue. You're looking to cook them for around 30-40 minutes. Turn and baste the chicken every 8 minutes so the sauce is coating the chicken and you get a deeply caramelised sticky drumstick.
  3. If the skin is taking on too much colour, remove from the barbecue and continue cooking in the oven at 220°C.
  4. Make sure the chicken is cooked by checking that the juices run clear, fibres are set and the internal temperature reads 75°C.

To Plate:

  1. Transfer the chicken to a large serving dish and sprinkle over the toasted sesame seeds and sliced spring onions.
