Recipe: Mojo Verde

Mojo Verde


2 garlic cloves

1 small bunch/30g coriander

¼ tsp ground cumin

½ tsp salt

100-150ml extra virgin olive oil

1-2 tbsp water - more if required

1-2 tbsp sherry vinegar to taste (or any vinegar of choice)


  1. Place the garlic, coriander, cumin and salt into a small blender or large pestle and mortar.  Blitz or pound the ingredients together until you form a paste, adding a small amount of water can help this process. 
  2. Whilst the blender is still running, gradually pour in the oil to make a drizzleable consistency.  If making in a pestle and mortar, add the oil gradually, pound it in or use a sauce whisk to help to bring things together.   
  3. Add a splash of water and a dash of sherry vinegar. Taste and adjust the seasoning as necessary.
