An Italian Inspired Summer Menu

Summer is certainly here and what better way to celebrate the season than with an Italian-inspired summer menu, from the country renowned for regionality in ingredients and dishes that creates culinary journeys like no other!

From the central region of Italy, Tuscany, we’re kicking off our menu with a light Panzanella salad. This rustic salad features chunks of crusty bread, soaked in the juices of ripe tomatoes, cucumbers, red onions, and fresh basil. The bread absorbs the flavours and textures, creating a harmonious blend of tanginess, crunch, and herb-infused goodness.

From Tuscany, we travel north to Venice for a delicious Prawns Alla Busara. Beautiful prawns cooked in a rich cherry tomato sauce, flavoured with garlic and parsley, show off flavourful, simple Venetian cooking at its best. We recommend serving this with plenty of crusty bread to mop up the sauce.

For dessert, we travel to Puglia, the southern region forming the heel of Italy’s “boot,” and an area known for its peaches Poached Peaches and Granita; is the  perfect dessert to enjoy the natural sweetness and juiciness of ripe peaches while adding a touch of coolness on hot days.

In Italy, the perfect end to a meal is of course a strong black shot of espresso in a demitasse. To pair with this coffee, serve it with a side of Almond Biscuits from our Chef Skills course.
