This 6 part course covers a wide range of eating occasions and you will cook alongside our skilled Leiths teachers who’ll be lifting the lid on some key fundamental plant-based cookery skills and techniques.

The 6 units are packed full of popular dishes and recipes have been cleverly selected to cover a wide range of foundation cookery skills. With Workshop’s unique hands-on method of learning, you’ll be cooking from day one with no need to read pages of theory in advance.

  • 6 units, unlocked weekly, guiding you through ~3 hours of cooking time each week

Average cooking time: 3 to 4 hours per week

  1. At the start of each week, you will be prompted to schedule 1-3 practical sessions and to gather all the kit and ingredients you’ll need to start cooking.
  2. In every session, you will follow a Leiths teacher through a series of step-by-step videos in your own kitchen, learning directly through your experience.
  3. After each session, you will be asked to upload photos of your creations for discussion and feedback from your classmates and mentor.
  4. Once you have completed all sessions on the course, you will earn your Certificate of Completion.

Course Curriculum

Week 1. Plant-Based Brunch

In this unit, you'll learn to cook 3 classic brunch recipes: a tofu scramble with beans and carrot bacon, buttery mushrooms on toast and a stack of plant-based pancakes.

Week 2. Plant-Based Italian

ou'll learn to make pasta with parmesan that you can use for a plant-based pesto. You'll then to make a pancake tray bake with a creamy spinach filling. Finally, you'll make a lemon olive oil cake infused with rosemary and topped with lemon icing.

Week 3. Plant-Based Street Food

There's no set definition for street food, but it tends to be food you can eat on the go that is highly flavourful, colourful, diverse in texture and fairly easy to make. Often, countries are defined by their street food. You'll be going to the Caribbean, the Middle East and Korea with these dishes.

Week 4. Plant-Based Healthy Food

This unit captures the flavours and freshness of your local farmers market and beyond. You'll learn to make edamame and chickpea falafel, plant-based Baja tacos with tofu and some healthy and vibrant summer rolls.

Week 5. Plant-Based Comfort Food

You'll see how you can incorporate indulgent comfort foods into a plant-based diet. You'll learn to make sausage rolls with home-made brown sauce, a rich mac and cheese with the very best plant-based products and a delicious chocolate traybake.

Week 6. Plant-Based Roast

You'll be making a beetroot and mushroom strudel with a plant-based smoked cheese. You'll also learn how to maximise the flavour of your vegetable accompaniments, served with a rich onion gravy. To finish, you'll make a dairy-free plum crumble with vegan custard.

Earn Your Certificate

Once you've met all the requirements to complete this course, you'll receive a verified Certificate of Completion.

Your class will be moving forward at a pace of 1 unit per week, however after each unit is unlocked you have the freedom to complete each session entirely at your own pace. You will also have the ability to schedule your sessions for times that suit your lifestyle.

This course has been carefully designed to make sure the advantages of real-world learning experiences are still embraced online. You will therefore be taken through the subject matter week-by-week to give you the chance to digest what you’ve learnt whilst progressing at a steady pace alongside your classmates. Unlike a real-world course though, you will also have the opportunity to revisit sessions and practice whenever and wherever you like!

What if I miss a week?

How will I interact with my class?

Shortly before your course start date, you will be invited to introduce yourself to the rest of your class via messaging on the Workshop app.

Each week, your class will unlock a new unit encouraging you all to cook the same dishes within the same week. At the end of every session, you will be asked to upload a photo of your dish, which your class and mentor will be able to view, like and provide feedback on.

How old do I have to be to take this course?

All Leiths Online courses are 18+ or require parental consent for those between 13-18. The exceptions are our Teens courses, which are exclusively for 13-18-year-olds.

The accreditation weekends at Leiths school in London have a wine element to them and are only for those aged 18 and over.
